<P>PROBLEM TO BE SOLVED: To provide a method for improving meat quality of livestock and/or poultry comprising improving lipid metabolism of livestock and/or poultry to redistribute the lipid so as to reduce and control adhesion of visceral fat, and simultaneously increase intramuscular fat so as to improve the meat quality. <P>SOLUTION: The method for improving meat quality of livestock and/or poultry comprises administration of uridylic acid (uridine monophosphate) to the livestock and/or the poultry. For a calf within the limits of age at a wearing period including newborn, only feeding with synthetic milk mixed with the uridylic acid at 2 g a day reduces the adhesion of visceral fat to make the calf grow healthy and also enable production of veal having excellently marbled meat quality.
