The assembly to bleed stunned cattle (3), for slaughter, has a number of bleeding sets (1) which move on a continuous path parallel to the cattle conveyor (21) movement. Each set has a hollow blade (2) inserted into the cattle, with a hose (4) leading to a blood collection vessel (5). An anticoagulant feed (6) is connected to the blood flow from the cattle. An integrated cleaning and disinfecting unit treats all the parts in contact with blood. The sets are carried by transporters (10-13) by holders which also transfer them between transporters.
