PROBLEM TO BE SOLVED: To provide an electromagnetic induction type fryer securely controlling the temperature of oil in an oil tank even if the oil tank does not includes a temperature sensor or the temperature sensor fails to control a heating means, and excellent in safety. SOLUTION: The electromagnetic induction type fryer heats the oil in the oil tank 2 by the heating means 3 by electromagnetic induction. The heating means 3 has a heating portion 3 composed of a magnetic shunt alloy 32 and an induction coil 33, the magnetic shunt alloy 32 is heated by a magnetic flux generated from the induction coil 33, and the heat of the heated magnetic shunt alloy 32 is used for heating the oil in the oil tank 2.
