PROBLEM TO BE SOLVED: To provide a new compound excellent in a hydrophilic property, acid resistance and salt resistance and useful as a surfactant and to provide a method for producing the surfactant. SOLUTION: The compound can be obtained by reacting dextrin, a polyorganic acid and an alcoholic compound other than dextrin. In the compound, the dextrin and the polyorganic acid and the polyorganic acid and an alcoholic compound other than the dextrin form an ester linkage. The method for producing the compound comprises reacting the dextrin with the polyorganic acid to synthesize a dextrin polyorganic acid ester and esterifying the dextrin polyorganic acid ester with the alcoholic compound other than the dextrin.
