<P>PROBLEM TO BE SOLVED: To provide a functional food material effectively utilizing a bean-curd refuse extract which is an active ingredient recovered from the bean-curd refuse that is a food waste. <P>SOLUTION: The functional food material is produced by regulating the solid concentration of the bean-curd refuse extract which is the active ingredient taken out by carrying out a hot-pressing treatment or an enzyme treatment of the bean-curd refuse or a combination thereof to 1-50% and seasoning the regulated bean-curd refuse extract or formulating the resultant extract with other materials. Furthermore, besides the bean-curd refuse extract, a residue prepared by carrying out the hot-pressing treatment and then the enzyme treatment of the bean-curd refuse or carrying out the enzyme treatment without carrying out the hot-pressing treatment and then solid-liquid separation is subjected to a finely dividing treatment.
