PROBLEM TO BE SOLVED: To elucidate an expression mechanism, etc., of a glucide degradation-related enzyme such as a glucoamylase when a method for culturing a Koji mold using a liquid culture medium containing a slightly degradable glucide with the Koji mold is provided. SOLUTION: It is elucidated that catabolite repression with a fermentation raw material is greatly related with productivity of enzymes in liquid culture of the Koji mold. Thereby, the catabolite repression can be controlled and productivity of the various enzymes including the glycoamylase can be regulated by using the slightly degradable glucide with the Koji mold as the fermentation raw material.
