<P>PROBLEM TO BE SOLVED: To obtain a stable fragrant ingredient precursor, to provide a method for producing the same and to obtain a fragrant ingredient obtained from the precursor and to provide a seasoning and a food comprising the fragrant ingredient. <P>SOLUTION: A compound represented by formula (1) or (2) (wherein, R denotes hydrogen atom or a glycoside-bound reducing sugar) of the figure is used as the fragrant ingredient precursor. The compound can be produced by reacting an Amadori compound with cysteine.
