PROBLEM TO BE SOLVED: To provide a method for producing shavings using as the raw material salmonid fish having stable quality and producible at a low cost. SOLUTION: This method for producing the shavings comprises slicing salmonid fish to arbitrarily 3 to 5 slices, soaking the sliced fish flesh in a protein splitting enzyme aqueous solution (a), evenly penetrating the protein splitting enzyme into the fish flesh by giving ultrasonic waves to the aqueous solution (a) and the fish flesh 3 followed by performing enzyme reaction and steaming or well boiling the product. Alternatively, the method comprises performing splitting enzyme treatment after steaming or well boiling, leaving the product as it is for 60-300 min in the atmosphere of 40-60°C to perform enzyme reaction and roasting or drying by a regular method to have the product finished.
