The invention relates to a method for encapsulating substances in a matrix containing sugar, sugar alcohols, sugar substitutes or the mixtures thereof by extrusion using an extruder having one or more temperature zones. Said method is characterized in that the matrix and the substances to be encapsulated are extruded at a temperature in which the sugar, the sugar alcohols, the sugar substitutes or the mixtures thereof come out of the extruder in a partly molten state. |
