The dosing assembly (2) and chilled conveyer (5) are encapsulated within a sterilized container (7). The food or chocolate comprises (5): (1) fat (50); (2) sugar (20); and (3) water (10). The membrane acts as a boundary between a sterile and non-sterile zone, or a pasteurized and non-pasteurized zone. The membrane is linked to a pushrod (18) and compensator (19) through the sterile barrier. The dosing unit (2) has one or more jets (13) discharging molten chocolate or other semi-liquid food. After discharge and cooling the food is crushed into particle form.
