<p><P>PROBLEM TO BE SOLVED: To provide a method for producing a frozen food having improved keeping quality after thawing the food and provide a frozen food produced by the method. <P>SOLUTION: A perishable food such as fresh vegetable, fish and shellfish is blanched with hot water containing a bacteriostatic agent, drained, cooled, packaged together with an aqueous solution of a bacteriostatic agent, sealed and frozen to obtain the frozen food. Examples of the bacteriostatic agent are soft roe protein, polylysine, nisin, hop extract, Capsicum extract, licorice extract, albumen lysozyme, glycine and alanine. <P>COPYRIGHT: (C)2006,JPO&NCIPI</p> |
