<P>PROBLEM TO BE SOLVED: To provide a food material excellent in texture, from which bitter taste is removed, while stably retaining a functional component of young fruit of citrus fruits by using the young fruit of citrus fruits as a raw material. <P>SOLUTION: The method for producing the functional component-containing food material containing the young fruit of citrus fruits as the raw material comprises a preliminary step for pulverizing the young fruit of citrus fruits and a modifying step for adding a bitter component-removing enzyme and a fermenting microorganism to the pulverized material and carrying out anaerobic fermentation. The bitter taste-removing enzyme is preferably naringinase and the fermenting microorganism is preferably a lactic acid bacterium.
