<P>PROBLEM TO BE SOLVED: To create a unique taste in the pickling of the ovary of sea urchin in Miso (fermented soybean paste). <P>SOLUTION: Washed and drained ovary 1 of a sea urchin is sandwiched between Miso layers 2, 2a interposing permeable sheets 3, 3a between the ovary and the Miso to impregnate the tasty juice leached from the Miso layers 2, 2a through the permeable sheets 3, 3a to the ovary 1 to pickle the ovary. The pickled ovary is produced by storing a pickling vessel 5 of the sea urchin ovary 1 in a refrigerator at about 5°C for several hours to several days. <P>COPYRIGHT: (C)2005,JPO&NCIPI |
