<P>PROBLEM TO BE SOLVED: To provide a β-maltose hydrate crystal-containing powder that is produced by the spray-drying method, has excellent solubility in aqueous media and is easy to handle, and provide a method for producing the same and use thereof. <P>SOLUTION: A maltose-containing solution is used as a mass kit and the solution is powdered by spray-drying, then the powder is kept in an atmosphere of a relatively low humidity and a relatively high temperature to form α-anomer as a maltose isomer in an amount of from 7 % to 14 %. The resultant β-maltose hydrate crystal-containing powder contains, calculated as anhydride, 86 % to less than 93 % of maltose and more than 2 % of glucose, the degree of crystallinity is 62 % to less than 72%, and has excellent solubility in aqueous media, good fluidity, easily handreable and is applicable in a wide variety of uses to foods, beverages, cosmetics or medicines. <P>COPYRIGHT: (C)2005,JPO&NCIPI |
