<P>PROBLEM TO BE SOLVED: To produce a functional raw material which abundantly contains L-arabinose, D-xylose, and various kinds of oligosaccharide and has a function favorable for health, a high safeness, and a good fragrance. <P>SOLUTION: In the method for producing the functional raw material, bran or defatted bran or unpolished rice is treated with an enzyme system containing a hemicellulase enzyme, a liquefying enzyme, and a saccharifying enzyme and then treated with yeast.
