PROBLEM TO BE SOLVED: To attain an efficacy on extraction in the same level as that using an organic solvent, by using an extraction solvent other than the organic solvent in a method for extracting lipids from an animal material as an extraction raw material, and to utilize the residual raw material extracted and remaining no organic solvent. SOLUTION: The subject method for extracting the lipids from the animal material as the extraction raw material, is carried out by using an electrically produced alkaline water as the extraction solvent while eliminating use of the organic solvent in an extraction process.
