摘要 <P>PROBLEM TO BE SOLVED: To provide a method for producing a fish processed product by which content of natural vitamin D<SB>3</SB>is increased while preventing deterioration in freshness of the product. <P>SOLUTION: The method for producing a fish processed product comprises applying ultraviolet light to fish maintained at low temperature so as to increase content of vitamin D<SB>3</SB>. The method makes it possible to increase vitamin D<SB>3</SB>in the fish without causing deterioration in freshness of the fish because the fish is maintained at low temperature when applying the ultraviolet light to the fish. <P>COPYRIGHT: (C)2005,JPO&NCIPI
