摘要 This invention relates to a method for the industrial production of pasta comprising 35-70% durum semolina, 0.2-1.0% alginate and 25-60% water. The ingredients are mixed and shaped into pieces or strands and cooked by contacting the pieces with hot wate or steam, whereafter the pieces are treated with a calcium chloride solution and placed in a containe in which they are sterilized.
