PURPOSE: Bean sprouts containing a ginseng ingredient and a cultivation method thereof are provided, thereby producing bean sprouts having high concentration of saponin and prolonged storage period using a small amount of the ginseng extract without using antiseptics. CONSTITUTION: The method for cultivation of bean sprouts containing a ginseng ingredient comprises the steps of: dipping beans in water, inserting the dipped beans into a vessel, and washing the beans with water; spray supplying the beans with water at intervals of 4 hours 6 times and storing them for 5 hours to obtain just before the germination beans; dipping the just before the germination beans in a mixed solution comprising 5.5 to 98.3% of underground water, 0.2 to 5% of ginseng extract, 1 to 5% of alcohol, and 0.5 to 4.5% of vinegar at a medium temperature for 1 to 5 hours to germinate the beans; transferring the germinated beans into a vessel, cultivating them at 15 to 25 deg. C for 6 to 7 days, and dipping the cultivated beans in a mixed water of 90 to 99 wt.% of the underground water and 1 to 10 wt.% of ginseng extract for 1 hour; and packing the dipped bean sprouts with a vinyl bag, and maturing it at 3 to 5 deg. C for 4 hours or more, wherein the ginseng ingredient is saponin. |
