PROBLEM TO BE SOLVED: To provide a method for producing millet liquor, by which "millet liquor" using "millet" said to contain potassium, iron and vitamin B compounds in amounts of 2 to 3 times those of polished rice, abundantly contain edible fibers, and have an enhancing effect on the concentration of good cholesterol can surely and easily be fermented. SOLUTION: This method for producing the millet liquor is characterized by using polished and steamed millet as a part or all of steamed rice, when Sake (rice wine) rice is mixed with malted rice, steamed rice and drawn water in a constant ratio and then charged to produce the unrefined Sake, in a conventional process for producing the Sake.
