摘要 PROBLEM TO BE SOLVED: To provide a method for producing souffle-like food base in which a souffle-like food base having resistance to freezing or cryopreservation can be prepared through easy and simple formulation with stabilized quality through a volume production process. SOLUTION: A souffle-like food base that has resistance to freezing or cryopreservation, good foam retention, and can be readily produced through the all-in-mix process in no need of foaming labor by mainly using raw materials starting from egg and milk, as other materials can freely be added, too.
