<P>PROBLEM TO BE SOLVED: To provide a method for producing dried fermented soybeans, capable of producing the dried fermented soybeans excellent in flavor, nutritive value, and tastiness at the same time and having a salt taste or a sweet taste. <P>SOLUTION: This method for producing the dried fermented soybeans comprises feeding a vessel with fermented soybeans, a thick soybean sauce, and a sweet seasoning rice liquor, soaking the fermented soybeans in a mixture of the thick soybean sauce and the sweet seasoning rice liquor, subjecting the vessel to refrigeration at 5-10°C for 3-7 days, freeing the vessel of the refrigeration, taking out the fermented soybeans of the mixture, removing an excessive amount of the mixture from the fermented soybeans, drying the soybeans in the sun, so as to fix the mixture to the fermented soybeans, removing an excessive amount of the mixture, stirring a starch powder into the fermented soybeans while sprinkling the powder over the soybeans, so as to make the starch powder adhere to the fermented soybeans, separating grains of the fermented soybeans from one another, and drying each of the grains by a warm wind. <P>COPYRIGHT: (C)2005,JPO&NCIPI |
