A new process for producing a catalyst which has a high mechanical strength and which is capable of producing an unsaturated aldehyde and an unsaturated carboxylic acid constantly over a long period of time and in good yield, is presented. A process for producing a catalyst for the production of an unsaturated aldehyde and an unsaturated carboxylic acid, which is a process for producing a catalyst containing at least molybdenum, bismuth and iron, to be used at the time of gas phase catalytic oxidation of an olefin, tertiary butyl alcohol or methyl tertiary butyl ether with a molecular oxygen-containing gas to produce the respectively corresponding unsaturated aldehyde and unsaturated carboxylic acid, characterized in that a mixed solution or aqueous slurry containing the above catalyst components, is dried, the moisture content of the obtained dried product is adjusted to be from 0.3 to 4 wt %, followed by tabletting.
