摘要 PURPOSE: Provided is a method for manufacturing fermented soybean paste, soy sauce and red pepper paste containing IgY by inoculating at least one of E. coli antigen, Helicobacter pylori antigen into a chicken, producing an egg containing IgY and then adding the IgY separated from the egg to fermented soybean paste, soy sauce and red pepper paste, thereby developing a functional food product from conventional food products. CONSTITUTION: A selected soybean is immersed in 200L of water for 8hr, hydrated, steamed, fermented at 25 to 30deg.C for 15 days and fermented with soybean, charcoal, saline water, etc. to produce fermented soybean paste(toenjang, Korean native name). An antigen causing gastritis is inoculated into a chicken to produce an egg containing IgY, The egg yolk of the egg is added to alkaline ionized water(pH 9.0), agitated and left. The left egg yolk solution is mixed with alkaline ionized water(pH 10.0) in a volume of 18 times thereof and left alone for 24hr. The IgY of the solution is concentrated and freeze dried. Thus obtained IgY is mixed with the obtained fermented soybean paste.
