<P>PROBLEM TO BE SOLVED: To provide a method of producing rice balls in which boiled rice is readily molded into the ball shape or the like, without causing shape deformation with the passage of time, keeping good texture, and extending the expiration date longer even in the case that the additives are minimized in their volumes. <P>SOLUTION: After boiled rice are molded into rice balls, while the boiled rice is still hot, the rice balls are cooled down by sucking the cooling air from the lower area of the rice balls as the cooling air is fed from the upper area of the rice balls.
