<p>Industrial and commercial production of bread made from one or more grain types comprises forming a dough from ground grain using water. A mixture containing ground grain, 0.5-1.5 wt.% yeast, 65-75 wt.% water salt and a further additive is used to form the dough. The dough is prepared at a temperature of 20-25[deg] C, portioned and stored for 8-90 hours at 2-5[deg] C.</p> |
