<P>PROBLEM TO BE SOLVED: To produce thin sheet-like cooked rice keeping puffed palate feeling and smooth surface shape of cooked rice, having adequate strengths and softness and having ≤10 mm thickness. <P>SOLUTION: Rice washed in a washing step 11 is boiled for a short time in a first heating step 12 to produce surface-gelatinized cooked rice. The surface-gelatinized cooked rice is put in a colander and directly cooled with water and allowed to stand for several minutes to make the surface in semi-drying state in a immersing and draining step 13, and the surface-gelatinized cooked rice is measured and fractionated in a measuring step 14. The fractionated surface-gelatinized cooked rice is lightly kneaded and spread to form sheet-like gelatinized cooked rice in a forming step 15 and the sheet-like surface-gelatinized cooked rice is steamed in a steam-heating step 17a of a second heating step 17 and hot water is applied to the sheet-like surface-gelatinized cooked rice in a hot water-heating step 17b of the second heating step 17 carried out simultaneously with the steam-heating step 17a every couple of several minutes.
