<P>PROBLEM TO BE SOLVED: To obtain a new salt of monatin expected as a sweentener and an organic amine and its crystal and to provide a new method for resolving a stereoisomer of monatin. <P>SOLUTION: The salt of monatin and an organic amine component such as an amino acid, an amino-alcohol, a dipeptide ester, etc., is provided as the new salt of monatin. The salt of monatin and an amino acid, a dipeptide ester, etc., is usable as a sweetening substance, its crystal is stable, has high sweetness and is expected to be a sweetener, its component and a sweetness providing component for food and beverage. The method for producing a stereoisomer of monatin comprises forming crystal of a salt of the stereoisomer mixture of monatin and an organic amine and using difference in crystallinity and solubility.
