In gelling aid (gelling sugar) production, granulated sugar is fluidized in an upward air stream to give a bed with about 60-70% empty volume and, in consecutive zones, sprayed from above with water or an aqueous solution and agglomerated with finely-ground, gel-forming polysaccharide (gelling agent) added at the same time (A); fixed by spraying with a liquid coating material (B); and dried (C).
