The invention relates to micronutrient- enriched reconstituted rice and to a process for the preparation thereof from comminuted rice matrix material; to mixtures of such enriched reconstituted rice with natural rice; and to a process for the preparation of reconstituted rice kernels from comminuted or broken rice.
