A method for preparing a filled savoury snack comprising the steps of: preparing a mixture with a creamy texture having an Aw of 0.8-0.9 and a relative humidity of 25-30%, comprising from 20 to 30% (dry weight) of one or more dairy products and from 10 to 20% of grated bread; preparing a dough preform for bakery products having an Aw of 0.8-0.9 and a relative humidity of 25-30%; filling said dough preform with the mixture; subjecting the filled dough preform thus obtained to rising and baking. |
