<P>PROBLEM TO BE SOLVED: To provide a solubilizing composition not causing gelation of preparation, having effect excellent in O/W type fine emulsification even in acidic conditions in the presence of an alcohol and having good taste and an emulsifying or solubilizing agent not producing precipitation even in low-temperature storage. <P>SOLUTION: The emulsifying or solubilizing agent for low-alcohol beverage comprises (a) a polyglycelol fatty acid ester in which ≥70 wt.% of fatty acid is palmitic acid and clouding point of 1 wt.% solution in 7 wt.% Na<SB>2</SB>SO<SB>4</SB>is ≥55°C and (b) an ionic emulsifying agent. <P>COPYRIGHT: (C)2005,JPO&NCIPI |
