PURPOSE: To provide a method for directly producing the xylooligo saccharide- containing gruel-like extract from the pulp membranes of a citrus fruit in a single step process and eliminating the defects of conventional methods for producing the xylooligosaccharide, to provide the gruel-like extract obtained by the production method, to provide food containing the gruel-like extract, and further to provide a method for producing the xylooligo saccharide from the pulp membranes of the citrus fruit. CONSTITUTION: The method for producing the xylooligo saccharide-containing gruel- containing extract comprises directly allowing an enzyme and a cell-released enzyme having xylanase activities, respectively, to act on the pulp membranes of a citrus fruit. The xylooligo saccharide-containing gruel-like extract obtained by the method. The food containing the gruel-like extract. The method for producing the xylooligosaccharicle comprises allowing the enzyme and the cell-released enzyme having the xylanase to directly act on the pulp membrane of the citrus fruit, fractionating the obtained gruel-like extract into a water-soluble fraction and a solid fraction, and further separating and purifying the water-soluble fraction. |
