PROBLEM TO BE SOLVED: To provide a temperature controller of a deck oven by which the temperature control reducing the overshooting of the temperature in the oven is carried out to finish bread without causing unevenness of baking. SOLUTION: An oven body 1 has an upper baking chamber 3 and a lower baking chamber 4 formed when a door 2 is closed. A heater 5 is arranged on the upper face of the upper baking chamber 3 and a heater 6 is arranged on the lower face of the upper baking chamber 3. A heater 7 is arranged on the upper face of the lower baking chamber 4, and a heater 8 is arranged on the lower face of the lower baking chamber 4. A temperature-detecting means 9 detects the temperature of the upper baking chamber 3, and a temperature-detecting means 10 detects the temperature of the lower baking chamber 4. A temperature-memorizing means 11 memorizes the temperatures at which the temperatures of the upper and lower baking chambers are controlled. Heaters of the upper and lower baking chambers are controlled so that the temperatures in the chambers may not be overshot based on the temperature data memorized in a heater-stopping temperature-memorizing means 11.
