PROBLEM TO BE SOLVED: To provide a control method of a liquid jetting apparatus which can carry out an efficient flushing operation reducing waste by making a flushing amount more proper, and can prevent discharge failures more surely, and to provide a liquid jetting apparatus. SOLUTION: A control part obtains a change of a temporary viscosity index number while carrying out correction not to exceed a maximum allowable value in a viscosity allowance range in which the risk of discharge failures to be caused by a viscosity increase of ink is small, on the basis of a viscosity index number immediately before the flushing operation of this time, and printing data for a discharge operation period of time of the next time. The control part sets the flushing amount in accordance with a final correction amount, and carries out the flushing operation for every nozzle opening on the basis of the set flushing amount.
