Amino-peptidase is extracted from animal tissue, e.g. kidney, liver, brain or heart tissue, by a process which comprises producing an aqueous suspension of fine particles of the enzyme-bearing material, treating the suspension with a water-immizible lipid-solvent, e.g toluene, petroleum ether, benzene or xylene, collecting the fraction which separates between the aqueous and non-aqueous phases and treating this material with a proteolytic enzyme, e.g. trypsin, whereby the amino-peptidase is liberated from its association with protein material and may be recovered by conventional means.
