摘要 <P>PROBLEM TO BE SOLVED: To obtain a primer specifically reacting with several kinds of lactic acid bacteria associated with the deterioration of a food product such as meat; and to provide a method for detecting the lactic acid bacteria associated with the deterioration of the meat product by which the several kinds of the deteriorating lactic acid bacteria are simultaneously separated and differentiated by using the primer and by using a denaturant concentration gradient gel electrophoresis (DGGE). <P>SOLUTION: The PCR primer for detecting the food-deteriorating lactic acid bacteria comprises a primer set comprising a combination of a forward primer having a specific base sequence and a reverse primer having another specified base sequence, and enables the sequence of a V3 region derived from a 16Sr DNA gene to be proliferated by a PCR. The kinds of the lactic acid bacteria are differentiated by culturing the lactic acid bacteria collected from a food, separating the DNAs from the cultured bacteria, carrying out the PCR of the DNAs by using the primer set to proliferate the V3 region sequences, separating the proliferated sequences by the DGGE to form bands, and comparing the moved distances of the bands with that of the band of a DNA-known lactic acid bacterium formed on the same condition. <P>COPYRIGHT: (C)2005,JPO&NCIPI
