A yeast head 4 is removed from a top fermentation vessel 6 by a stationary suction nozzle connected to a vacuum pump through a separator vessel, which suction nozzle is in the form of a 2 1/2 -inch diameter stationary tube 1 having a closed end with one or more narrow slots 2 formed adjacent the closed end to form a constricted, shear-inducing inlet to the tube. The slots may extend over about half of the tube circumference. A second narrow slot or row of narrow slots may be formed parallel to the first slot or row of slots. A shield 3 and hood 10 may be fitted as shown. The slots may be used as spray nozzles for cleaning fluid to be applied to the fermentation vessel.
