METHOD FOR PRODUCTION OF PHOSPHOLIPID DERIVED FROM FISH AND SHELLFISH

PROBLEM TO BE SOLVED: To provide a method for industrially efficiently producing a high quality phospholipid free from heavy metals which may be harmful to human bodies by using fish and shellfish as a raw material.

SOLUTION: This method comprises extracting and removing heavy metals contaminating the phospholipid from a nonpolar solution in which the phospholipid derived from fish and shellfish is dissolved by performing a liquid-liquid extraction using a mixed solvent of a water soluble chelating agent-dissolved polar solvent and water.
