METHOD FOR MODIFYING PICKLE PASTE, PICKLE AND FOOD BY ADDING OLD VEGETABLE

PROBLEM TO BE SOLVED: To provide a method for modifying through using food such as a pickling basic material and pickles.

SOLUTION: This method for modifying food by adding old vegetables is such one that there are many mustard-oil components in vegetables called green vegetables Yamagata and Miyagi prefectural areas, and the changed flavor of the vegetable becomes the cause of a nasty smell by itself, but becomes a fermented smell i.e. adaptation of flavor through adding a small amount of the vegetable with changed flavor to food.
