METHOD FOR PRODUCING DRIED CHICKEN EXTRACT AND DRIED CHICKEN EXTRACT PRODUCED THEREBY

PROBLEM TO BE SOLVED: To provide a method for producing a dried chicken extract having delicious taste and flavor characteristic of chicken extract and excellent dry state by using a drum-type drier and dispensing with the addition of an additive such as starch as a drying assistant to eliminate the influence of the additive on the taste.

SOLUTION: The method for the production of a dried chicken extract comprises the adjustment of the gelatin content of the chicken extract to 47-60 mass% based on the solid content and the drying of the product with a drum-type drier. The invention further provides a dried chicken extract produced by the method.
