PURPOSE: A method of making pickles using the outer leaves of cabbage or other vegetables as a main ingredient and carrot, onion or the like as an optional ingredient is provided. It reduces the generation of waste during cleaning cabbage and can change the aging process due to a consumer's preference. CONSTITUTION: The outer leaves of cabbage or other vegetables are cut in fibrous directions and orthogonal directions to a specified size and mixed with an optional ingredient such as carrot, onion or the like after drying. Then, it is mixed with sauce containing 1.5% by weight of oxidized starch, 2% by weight of glacial acetic acid, 20% by weight of sugar and 5% by weight of ginger and aged. |
