PROBLEM TO BE SOLVED: To provide a method for cooling a high temperature steel material by using water with which the suitable heat transfer can be obtained and in which the suitable water quality management for preventing the clogging of a nozzle is performed, and a method for producing the stable quality steel material by using this cooling method. SOLUTION: This cooling method for high temperature steel material comprises: controlling SS concentration of the cooling water which is used in a circulation manner to <20 mg/L with a water-treatment; and cooling the steel material by using this cooling water. Further, when managing the SS concentration, concentration of organic coagulant in the cooling water is held to 0.1-200 mg/L and pH is held to 6-8, and thereby the SS concentration is controlled.
