PROBLEM TO BE SOLVED: To provide an apparatus for continuous ohmic heating of a food raw material having fluidity designed to enhance the sliding properties of an inner peripheral surface of a pipeline, reduce the difference of flow velocity produced in a part between the outside and the inside of the food raw material having the fluidity, thereby uniformize the pass velocity of the food raw material receiving Joule heating, reduce the temperature unevenness and stabilize the resultant product.

SOLUTION: The apparatus for the continuous ohmic heating of the food raw material having the fluidity is designed to carry out the Joule heating of the food raw material having the fluidity across electrodes 2 installed in the pipeline 1 for supplying electricity while continuously moving the food raw material having the fluidity in the pipeline 1. A water supplying mechanism 4 for supplying water to the inner peripheral surface of the pipeline 1 is installed near an outlet of a pump 3 for transferring the food raw material.
