PROBLEM TO BE SOLVED: To modify rice flour bread dough and improve the quality of bread made from the rice flour bread dough. SOLUTION: The rice flour bread dough is produced by adding kneading water to a raw material composed mainly of fine rice flour and kneading the mixture. The water for kneading is an acidic electrolyzed water or an alkaline electrolyzed water produced by the electrolysis of water. The rice flour bread dough is modified by fully utilizing the functions of the electrolyzed water to improve the quality of the rice flour bread produced by using the rice flour bread dough as a raw material.
