PROBLEM TO BE SOLVED: To make it possible to simply mass-produce a cellobiose in an industrial scale at a low cost, by using pulp highly reactive with a cellulase and having a specific degree of crystallinity and degree of water retention, in processes for producing a cellooligosaccharide, especially, the cellobiose above all, which is expected to be used in fields of a wide range. SOLUTION: A method for producing the cellooligosaccharide comprises using the pulp having a value of 10-80% which is calculated by a calculating formula (formula-1) of a degree of crystallization of cellulose-I type according to X-ray diffractometry and a degree of water retention of 200-1000% as a reactant for the cellulase, wherein formula-1 is expressed by:χc=((I002C-Ia)/I002C)×100 [χc is a degree (%) of crystallinity of cellulose-I type; I002C is a diffraction intensity in the 002 face (2θ=22.6°); and Ia is a diffraction intensity in an amorphous part (2θ=18.5°)]. The pulp is subjected to any one of a fibrillation treatment, a mechanochemical treatment, and a chemical treatment, or a plurality of the treatments to obtain the cellooligosaccharide.
