A method for producing the medicinal herb edible oil is provided, which oil improves human health by eating it, and improves taste and flavor of food by adding it into the food. The method for producing the medicinal herb edible oil comprises the steps of: mixing a mixture of Angelica gigas Nakai, Glycyrrhiza uralensis radix, Cnidium officinale and Panax ginseng C.A Meyer with edible oil such as corn oil or bean oil in a volume ratio of 1:3; inserting the mixture into a vessel; and fermenting the mixture at 5 to 35 deg. C.
