PURPOSE: A method of making functional beverage by fermenting propolis extract, fruit juice and yeast, concentrating and ultrafiltering is provided. The product has effects of lowering alcohol concentration in blood, reducing a hangover and purifying blood by fruits and propolis and thus is effective in preventing various diseases and improving health. CONSTITUTION: A lump of propolis is ground at low temperature and filtered to remove impurities. Propolis solids are mixed with pure fruit juice in a weight ratio of 1:1 for 1 to 2hr and centrifuged with a high-speed centrifugal separator for 30 to 60min. The extract of propolis and fruits are fermented with yeast at 40 to 45deg.C for 2 to 3hr, concentrated in a vacuum concentrator for 50min and cooled with a nitrogen cooler of -169deg.C for 1min, followed by ultrafiltration using an ultrafiltration membrane. The pure fruit juice is obtained by juicing fruits selected from an orange, lemon, apple, mango, plum or the like.
