<P>PROBLEM TO BE SOLVED: To provide a method and an apparatus as a production means enabling production by a machine even if thinning fish paste for a rolled food produced by rolling up on a prescribed core material the fish paste obtained by mixing a prescribed additive material with ground fish meat followed by kneading. <P>SOLUTION: The apparatus for producing the rolled food has a transporting conveyor 1 for plate-shaped fish paste mounting the core material, a rolling-up mechanism 4 having a scratching plate 42 arranged above the transporting conveyor, and rolling the fish paste up on the core material through running after the plate-shaped fish paste to be transported from the backward and scratching away the fish paste followed by passing forward, and a peeling mechanism 5 having a peeling wire 51 (for instance, a piano wire) sliding in a prescribed range on a fish paste place on the transporting conveyor just before or after the beginning of the fish paste scratching operation of the scratching plate. The method for producing the rolled food comprises scratching one side of the core material (b) in the plate-shaped fish paste (a) on which the core material (b) is mounted, and at the same time, peeling off the fish paste from the fish paste mounting place on the conveyor when rolling the fish paste up on the core material. <P>COPYRIGHT: (C)2005,JPO&NCIPI |
