PURPOSE: A kimchi refrigerator containing a memory part for storing time interval data according to a maturing level, a multi-stage maturing level input part for selecting the desired maturing level and a control part for controlling the maturing time on the basis of the maturing level is provided. It enables maturation of kimchi to a state which suits the users taste and substantially realizes the difference in taste according to various stages. CONSTITUTION: The kimchi refrigerator contains: a memory part for storing time interval data according to the maturing level in which the time interval is differently set according to a maturing level; a multi-stage maturing level input part for selecting the desired maturing level of various stages of the maturing level; a control part for controlling the maturing time on the basis of the maturing level selected through the multi-stage maturing level input part and time interval data according to the maturing level; and a time setting part for setting the maturing time meeting the input maturing level in comparison to the input maturing level and time interval data according to the maturing level. The time interval data according to the maturing level is calculated by dividing acidity into various stages according to the same acidity gap and measuring latency time for acidity according to each stage divided into the same interval.
